Cheesecake is a delicate cheese-curd dessert based on crushed cookies. It came to us from Europe, but we know it like an American dish. Cheesecake, as a rule, has two layers: the bottom of the dough, and the top of the souffle. How to make cheesecake at home? In the recipe of classic cheesecake, or cheesecake "New York", there must be cream cheese "Philadelphia", fatty cream or sour cream, vanilla extract and lemon zest. Or easier cream cheese, sugar, cream, eggs. In addition you will need a cookie - it a basis of this cake. To the filling of cottage cheese or cheese, if desired, you can add berries or sweet toppings, for example chocolate. Cheesecake chocolate has an excellent taste.
Steps of cooking:
1. Preheat the oven to 180 degrees. Lubricate the cake mold. Blender well grind cookies. Add melted butter, sugar and salt, mix. Put the resulting mass into a mold, pressing it down with your fingers, evenly distribute it along the bottom and edges. Bake for 12-15 minutes. Cool on the grate. Fire reduce to 150 degrees.
2. Boil water in the kettle. Prepare the filling. Mix cream cheese at medium speed. Gradually add sugar, lemon zest and juice, salt. Then hammer in one egg and add the sour cream.
3. Wrap form with cake in the foil. Pour out the filling. Put in a baking tray with high sides, pour boiling water into the baking tray so that the water reaches 1/2 the height of the filled mold. Bake for about 1 hour 45 minutes until cooked. Remove the form from water, cool at room temperature for 20 minutes. Carefully detach the sides of the mold with the edge of the knife. Leave at room temperature until completely cooled. Leave in the refrigerator for the night.
