Chicken bouillon
Chicken bouillon is universal: it can be used as a basis for soups or second courses or simply drink from a mug. Transparent and very tasty, it just prepares and does not take a lot of time. Correctly cooked chicken bouillon is brewed from forty minutes to two hours, depending on the size of the chicken or its parts. Breasts are cooked the fastest, and the broth of them turns out to be light, clean and ideal for preparing tom-yama or Chinese noodles. A bouillon from chicken thighs, and even more so from the whole bird, turns out rich and fat. To give a golden color and taste, add onion husks, carrots and bay leaves cut into slices. This dish warms well and heals colds and bad mood. Serve it hot, sprinkled with salt, black pepper and herbs.
Cooking steps:
1. Take the chicken, cut it into 2 or 4 pieces, or put it in a pan, pour the water into the pan so that it covers the chicken by 1.5-2 fingers.
2. In the process of cooking, water will boil away, and therefore you can fill the amount of liquid you need by adding as much hot water as you need, just do not forget to try the broth for salt.
3. When cooking, let the broth boil, then reduce the heat and continue cooking on low heat.
Note:
You can buy broth chicken (they are huge from 2 kg and more) of them in general you get a wonderful bouillon, but cook them from 2 to 3 hours. If you want to get the delicious meat you should to salt immediately as it will boil, and if you want to get the beautiful broth, then it is necessary to salt at the end of cooking. When the water boils, it is advisable not to cover the pan with a lid, then the broth will be transparent. About the foam. It is a protein. If you washed the chicken well before cooking, then naturally there is no dirt on it. So, you want to remove the foam, but you do not.
If the bouillon is prepared for the patient, it is not recommended to remove the foam - with it the broth is more nutritious.
